Chocolate chip cookies with freshly milled flour and chewy, chocolatey, and have such great flavor from the flour. They have a little bit extra nutrients from the whole wheat flour making me feel a little bit better about eating these.

Made with freshly milled soft white wheat, butter, brown sugar, white sugar, eggs, vanilla, salt, and a few other secret ingredients to make these the best! Soft white wheat makes the best baked goods. If you mill your own flour this is a must grain to keep stocked.

Ingredients:

Soft white wheat – The perfect grain for baked goods

Butter – unsalted melted butter

Eggs – You will need 2 eggs at room temperature.

Brown sugar

White sugar

Chocolate Chips – Semi sweet or dark choclate

How to make freshly milled chocolate chip cookies

Step 1: Mill your flour Step 2: Melt your butter and allow it to cool before adding it to the batter.

Step 3: Add your dry ingredients to a medium sized bowl and mix together

Step 4: Add butter and sugars to a large bowl and mix together using a hand mixer or a stand mixer with the whisk attachment

Step 5: Add dry ingredients to the wet ingredients and mix with a spatula. Mix in your chocolate chips.

Step 6: Chill dough in the refrigerator for a minimum of 30 minutes or up to 2 hours. If longer than 2 hours let batter sit on the counter for 30 minutes to soften up before scooping your cookies.

Step 7: Preheat oven to 350°. Prepare baking sheets with parchment paper or a silicone baking mat. Scoop 6 cookies onto each sheet using a cookie scoop. Don’t flatten cookies. Bake for 13-14 minutes.

Ingredients
  

  • 2 1/2 cup Soft white wheat 350g of flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 tsp cornstarch
  • 12 tbsp unsalted butter melted a stick and a half
  • 3/4 cup brown sugar
  • 1/2 cup white sugar
  • 1 egg
  • 1 egg yolk
  • 2 tsp vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 2 tbsp Maldons sea salt for topping optional

Method
 

  1. Mill your flour. Melt the butter and allow it to cool for a few minutes.
  2. In a medium sized bowl add all of your dry ingredients. Mix together.
    2 1/2 cup Soft white wheat , 1 tsp baking soda, 1/2 tsp salt, 1 1/2 tsp cornstarch
  3. In a large bowl add your melted butter, and sugars and mix well with hand beaters or in a stand mixer with the whisk attachment. Then add egg and egg yolk, and vanilla extract and mix again.
    12 tbsp unsalted butter melted, 3/4 cup brown sugar, 1/2 cup white sugar, 1 egg, 1 egg yolk, 2 tsp vanilla extract
  4. Add the dry ingredients to the wet and mix with a rubber spatula. Add in your chocolate chips. Chill dough for a minimum of 30 minutes or up to 2 hours.
    1 cup semi-sweet chocolate chips
  5. When ready to bake preheat your oven to 350°. Line baking sheets with parchment paper or a silicone baking mat. Scoop 6 dough balls onto each pan. Don't flatten the cookies. Bake for 13-14 minutes.
  6. Top with Maldons flaky sea salt if desired.

Notes

Don’t skip the dough chilling or you will have flat cookies

  1. I LOVE THAT YOU PUT THE MEASUREMENTS IN THE INSTRUCTIONS!!! I write out my recipes this way. They should all be written like that in my opinion.
