Quick breads such as these buttermilk biscuits are my guilty pleasure. They come together so fast and are simply delicious. Eat these plain with butter, jam, make a sandwich, or pour sausage gravy over these. I can’t describe the magic that these biscuits are, you will just have to try to out for yourself.

Buttermilk substitutions
Don’t have buttermilk on hand? Well I often don’t either which is why I love this cheater buttermilk. Take 1 cup of milk and add 1 tablespoon of lemon juice or vinegar in it and let it sit for 5-10 minutes before adding it to the dry ingredients.
Another substitute for buttermilk is milk kefir. I make my own milk kefir at home so I always have that which is a perfectly great substitution for buttermilk.

sugar
baking powder
baking soda
buttermilk

How to make buttermilk biscuits
Step 1: Preheat oven to 425°. Line 2 baking sheets with parchment paper. Add dry ingredients to a large bowl and mix together.
Step 2: Using a cheese grater use a side with large holes and grate frozen butter into the dry ingredients, once it’s all grated use your hands to toss the butter and the flour together. Don’t squeeze the butter in between your fingers. If you don’t have a cheese grater cut up the cold butter and use a pastry cutter to incorporate the butter into the flour mixture.
Step 3: Add buttermilk until it just comes together. I use my hands.
Step 4: Add dough to a floured surface, form into a flat circle. Sprinkle a little flour over top of the dough and roll out until it’s about 1 inch thick. cut dough into thirds. stack each piece on top of each other and roll out again. Repeat the cutting and rolling 2 more times keeping the dough floured so it doesn’t stick to the rolling pin.
Step 5: You can either cut the dough into circles using a 2 1/2 inch biscuit cutter or a drinking glass or cut them into squares. Place them onto your baking sheet and bake for 16-18 minutes. Brush the tops with butter if desired.
