Cheater buttermilk (if you don't have buttermilk)
- Take the buttermilk and add 1 tbsp of lemon juice or vinegar to it and allow it to sit for 5 minutes.
Biscuits
- Preheat oven to 425°. Line 2 baking sheets with parchment paper
- Add dry ingredients to a large bowl and mix together.3 cups All purpose flour, 1 tbsp sugar, 1 tbsp baking powder, 1/4 tsp baking soda, 3/4 tsp salt
- Using a cheese grater use a side with large holes and grate frozen butter into the dry ingredients, once it's all grated use your hands to toss the butter and the flour together. Don't squeeze the butter in between your fingers. If you don't have a cheese grater cut up the cold butter and use a pastry cutter to incorporate the butter into the flour mixture.
- Add buttermilk and mix until dough just comes together. I use my hands.
- Add dough to a floured surface, form into a flat circle. Sprinkle a little flour over top of the dough and roll out until it's about 1 inch thick. cut dough into thirds. stack each piece on top of each other and roll out again. Repeat the cutting and rolling 2 more times keeping the dough floured so it doesn't stick to the rolling pin.
- You can either cut the dough into circles using a 2 1/2 inch biscuit cutter or a drinking glass or cut them into squares. Place them onto your baking sheet and bake for 16-18 minutes. Brush the tops with butter if desired.
Notes
The key to biscuits is to keep everything cold. Freeze your butter for 10 minutes beforehand.
