Creamy Chicken Pasta with Sun-dried Tomatoes

Creamy chicken pasta with sun-dried tomatoes is the perfect filling comfort meal. Made in one pot (minus the pasta) making for easy clean up. Chicken breasts are cut up into small pieces seasoned and seared to perfection. The creamy sauce is made with simple ingredients. My husband requests this for dinner the most!

How to make Creamy Chicken Pasta

Step 1: Get a pot of water boiling. Cut up chicken breasts into small bite sized pieces and season them. Get a large pan heated up with some oil in the pan. Add chicken to the pan once it’s hot. Cook for 10 minutes or until chicken is fully cooked. Remove chicken from pan and place on a plate. Add pasta to the boiling water and cook until done.

Step 2: Add diced onion to the pan and cook until soft, about 5 minutes. Add minced garlic. and cook for 30 seconds. Add tomato paste and butter, stir. Once butter is melted mix in the flour. Whisk in broth, heavy cream, and sun dried tomatoes. Turn heat to low and add in cheese. Whisk until cheese is melted.

Step 3: Add the cooked chicken to the cream sauce and serve over pasta.

Ingredients
  

Chicken Breast
  • 2 chicken breasts
  • 1/2 tsp garlic powder
  • 1/2 tsp pepper
  • 1/2 tsp paprika
  • 1 tsp salt
  • 1/2 tsp onion powder
  • 1 tsp italian seasoning
  • 2 tbsp olive oil for cooking
Cream Sauce
  • 1/2 diced onion
  • 1 tbsp minced garlic
  • 2 tbsp butter salted or unsalted is fine
  • 1 tbsp tomato paste
  • 1 tbsp flour
  • 2/3 cup chicken broth
  • 1 1/4 cup heavy cream
  • 1/4 cup Sun dried tomatoes in a jar of oil
  • 1/2 cup shredded parmesan cheese
Other
  • 16 oz Pasta I like linguine or penne
  • Fresh basil for topping optional

Method
 

  1. Cut up your chicken breasts into small bite sized pieces. Season with the listed seasonings. Preheat a large pan over medium high heat with olive oil. Add chicken to the pan once hot and cook until done, around 10 minutes. Once done set aside on a plate.
    2 chicken breasts, 1/2 tsp garlic powder, 1/2 tsp pepper, 1/2 tsp paprika , 1 tsp salt, 1/2 tsp onion powder, 1 tsp italian seasoning , 2 tbsp olive oil
  2. Get a large pot of water boiling for pasta. Once boiling add pasta and cook per package instructions.
  3. To the same pan that the chicken was cooked in, add a little more olive oil if needed and add the diced onion. Cook for 5 minutes over medium to medium low heat. Add minced garlic, stir in. Add butter and once it's melted add the flour and stir. Add tomato paste and mix in. Add chicken broth stir until well combined then add heavy cream, sun dried tomatoes, and parmesan cheese mix until cheese is melted.

  4. Add cooked chicken to the sauce and serve over pasta.
