Beef fried rice with homemade yum yum sauce

A filling, protein packed meal that is super simple and comes together in 30 minutes or less. Made with ground meat, rice, carrots, peas, and seasonings to make this taste like you're eating at a Chinese restaurant.

Ingredients
  

  • 1 pound ground beef
  • 3 tbsp sesame oil divided
  • 1/2 white onion diced
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 2 tbsp minced ginger
  • 2 tsp minced garlic
  • 3 cups cooked rice
  • 1/2 tsp onion powder
  • 1/2 cup frozen peas
  • 1 carrot grated
  • 1/4 cup Bachans japanese bbq sauce
  • 2 tbsp coconut aminos or low sodium soy sauce
  • 2 eggs beaten
  • 2 tbsp Green onions for topping optional
Homemade Yum Yum Sauce
  • 1 cup mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp sugar
  • 1/2 tsp paprika
  • 3/4 tsp garlic powder
  • 1 1/2 tsp rice vinegar
  • 3/4 tsp sesame oil
  • 1/2 tsp salt
  • 1 tbsp sriracha hot sauce
  • 1 tbsp water

Method
 

  1. Brown ground beef in a large pan in 1 tbsp of sesame oil. Add in onion powder, salt, pepper, and cook until fully cooked. Drain grease if needed and transfer meat to a plate.
  2. To the pan over medium heat add 2 tbsp of sesame oil, diced onion, and cook for a few minutes until softened. Stir in minced ginger and garlic. Add in peas, carrot, and stir until veggies are tender. Push the veggies to one side of the pan and add in 2 beaten eggs and scramble. Once the eggs are just about done mix them into the veggie mixture.
  3. Add the cooked rice to the pan. Add in the coconut aminos (or soy sauce), bachans japanese bbq sauce, and break up rice mixing with the vegetables as you go. Cook for about 5 more minutes.
  4. Add the cooked meat back to the pan and mix everything together. Top with sliced green onion and homemade yum yum sauce.
Homemade yum yum sauce
  1. Add all of the ingredients to a small bowl and mix well.

Notes

Day old rice works best for this. Or made earlier in the day and placed in the fridge for a couple of hours. 
You can get minced ginger in a tube, it's so convenient. 
The yum yum sauce gets better as it sits in the fridge, so if you can, make it ahead of time to let the flavors deepen.
