Honey Spelt Biscuits with Freshly Milled Flour

These freshly milled honey spelt biscuits are simple and nourishing. The spelt flour has a distinct nutty flavor that I love. Excellent with sausage gravy, chicken pot pie filling, or just eaten with butter and jam.

Made exclusively with whole grains, these give you all the vitamins and minerals you need in a buttery biscuit. Spelt is one of my favorite wheat berries to mill. It’s an ancient grain so It’s non-hybridized. Spelt is slightly nutty, rich in flavor, and mildly sweet. It can be easy to overmix these biscuits. Spelt doesn’t do well being overmixed and that will result in a flat biscuit.

How to make Honey Spelt Biscuits

Step 1: Mill your flour. I love my nutrimill

Step 2: Add in dry ingredients to flour and mix

Step 3: Cut up your cold butter into small cubes, freeze for 5 minutes and add it to the flour mixture. Using a pastry cutter cut the butter into the mixture

Step 4: Mix honey and milk together and then add it to the flour mixture

Step 5: Continue to mix together with the pastry cutter until a shaggy dough forms

Step 6: Place in the fridge and allow the grains to soak up the liquid for 15 minutes

Step 7: Use your hands to form the dough together even more in the bowl before dumping it out on the counter. Then dump it out on a floured counter and form into a circle. Cut dough in half with a bench scraper and layer one of the halves on top of the other. Roll together to about 3/4″ thick.

Step 8: Use a 2″ biscuit cutter to cut your biscuits. You should get 9 biscuits.

Step 9: Place onto a parchment lined baking sheet. Bake at 450° fahrenheit for 12-13 minutes.

Ingredients
  

  • 1 cup spelt flour (140g)
  • 1 cup soft white wheat flour (140g)
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 10 tbsp unsalted cold cutter cut into cubes
  • 1/2 cup cold milk 125g
  • 1/4 cup honey 80g

Method
 

  1. Preheat the oven to 450° Fahrenheit
  2. Cut your butter into small cubes and place into the freezer for 5 minutes
  3. Mill your flour. Add it to a large bowl. Add in all the dry ingredients and mix
  4. Put your cold butter into the dry ingredients and mix in the butter using a pastry cutter. It should look like pea sized clumps.
  5. Put the milk and honey in a cup and stir. Then add it to the dry ingredients
  6. Stir until a shaggy dough forms. Place into the fridge for 15 minutes to allow the grains to soak up the liquid
  7. Before dumping the dough onto the counter use your hands to form a ball with the dough making sure all the flour is incorporated.
  8. Dump dough onto a floured surface
  9. Form into a circle and roll until about 3/4" thick. Using a bench scraper cut the dough into thirds and stack each piece on top of each other. Roll together until 3/4" thick.
  10. Using a 2" biscuit cutter cut your biscuits. Then take the scraps and bring them together and do it again until you have no dough left. Place your cut biscuits onto a parchment lined baking sheet
  11. Bake for 12-13 minutes. After baking brush the tops with butter if desired.

Notes

Make sure you keep the butter very cold or else these will flatten in the oven. If you forgot to preheat your oven keep the dough in the fridge until it’s ready to go in.
